Founder Eli Halden started roasting in his garage in 2016 after a decade as a line cook. Halden buys directly from a handful of farms, roasts in small batches every week and trains its partners’ staff to brew it properly. Eli spent ten years on restaurant lines, where the coffee was always an afterthought: stale beans, burnt pots, nobody trained to fix it. In 2016 he started roasting in his garage with a popcorn popper, handing bags to the chefs he used to work with.
Within a year he had twelve restaurants asking for more and a landlord asking about the smoke. The first café opened on Halden Street in 2018, which is how the company got its name. Eli still roasts twice a week, and still answers the wholesale phone when Theo is out.
